The planting methods, the farming methods and the pruning systems we use are those that traditionally indicate as the most suitable to maintain constant the characteristics of olives and oil product.

The harvest of our olives is very early, usually ends by early November, which allows us to compensate for the lower oil yield with a superlative quality for very low acidity, high content of polyphenols and vitamin E and to exalt exceptionally the taste and the inimitable scent of the variety "Canino". Cold pressing takes place within 24 hours of harvesting.
The oil is stored in stainless steel tanks located in controlled temperature environments and in the absence of oxygen, so as to maintain intact the optimal quality of the product for over 18 months.
The oil is packaged shortly before sale.

 

We have called the oil with the same name of our Villa "Relais Pian di Vico" located in the heart of the olive grove so that the excellence of one is combined with the exclusivity of the other;both in fact best express in  erms of product and reception the great potential of the territory of TUSCANIA.

 

The plants of our olive grove, the only ones from which this oil is obtained, all belongto the cultivar "Canino"; a variety of plant present since the time of the Etruscans characterized by rich foliage, rusticity and ease of adaptation to the soil.
The fruits produced by this variety are small, with a low-weight kernel and a medium-oil content, are strongly resistant to detachment and ripen late to scale, characteristics which together with the natural resistance to many parasites allow us to cultivate the olive trees with environmentally friendly techniques in respect of the environment and to protect the genuineness of the product.
